You know those fancy burger buns you get from fancy "burger bars"? The brioche kind of burger bun.. This is that bun, but better, and really easy to make. This is a combination between a brioche and Japanese milk bread dough, that to me creates the ultimate burger bun. It's light and airy, glossy, and has a nice fluffy inside that gets a great toast and absorbs juices without going soggy. Plus these buns can be used for all sorts of things other than burgers, like the most amazing breakfast sandwich, or a fried chicken sandwich. It's all good, and just in time for that summer grilling.

Ingredients you'll need:
1.5 pound (650g) beef tenderloin (ideally thick center cut)
2 tablespoons (24ml) high heat oil like canola
salt and pepper to taste
good dijon mustard for brushing
1.5 sheets of puff pastry (or just one if you want to skip the lattice)
6-8 slices prosciutto

Duxelles:
1 pound (468g) mushrooms (can be a mix or just be all cremini)
2 shallots
3 cloves garlic
2 tablespoons (24ml) olive oil
3 tablespoons (44ml) whiskey *optional*
leaves from 2 sprigs of fresh thyme *also optional)
salt and pepper to taste

Crepe:
3.5 tablespoons (51g) all purpose flour
140ml whole milk
1 egg
salt to taste

Egg wash:
2 egg yolks
1 tablespoons (14ml) water

Don't be shy. Risotto is in fact one of the simplest dishes on the planet. Yes you need egg yolks to make eggnog. In my opinion this is so easy to make that I think more people should be making their own eggnog instead of buying it. The Holidays can make everyone a little crazy, but it's easier to relax when you're sitting with a nice chilled glass of homemade eggnog.
